My waffles are made without yeast, they’re even paleo. I’m not sure “bread” can be made without yeast though I defer to someone with more expertise. My liquid bread comes with yeast, we should plan on some liquid bread too! Oh fluffer-nutter, I get in Friday.

Any leavening agent would work so baking soda would be the most basic substitute. It would give the bread a bitter taste though. You could also just make a simple torta style flat bread with water and flower. It might be possible to do it with airation like a Japanese fluffy omelet but I've never tried.
